Jordan Bailey & Majken Bech-Bailey
Just over four short months after opening, husband and wife Jordan and Majken Bech Bailey and their young, multi award-winning team at Aimsir were awarded not one, but two Michelin stars for their ground-breaking restaurant which opened in May 2019 in the stunning setting of Cliff at Lyons.
Aimsir is led by husband-and-wife team; Cornwall-born chef Jordan Bailey, former head chef at 3-star Michelin Maaemo in Oslo, and Danish general manager Majken Bech-Bailey. They moved to Ireland in early 2018 to explore the food producers and ingredients of their newly adopted home. Jordan was also a key member of 2-star Michelin Restaurant Sat Bains, while Majken honed her front of house skills at 2-star Michelin Henne Kirkeby Kro.
As much as possible, everything served in Aimsir is grown or produced on the island of Ireland. An all-island restaurant, the best producers and growers from all over Ireland have been invited to be part of this new celebration of the most powerful, significant and influential force in this country – the weather.
As Aimsir grows, sustainability remains at the heart of everything we do. The continued development of the Aimsir Farm on the grounds of the Cliff at Lyons estate allows us a unique opportunity to custom produce for each dish, ensuring the highest possible quality and taste.
